D. Carlos VII of Borbón y Austria, pretender to the Spanish Throne, actively participated in the second Carlist campaign, touring the entire Basque Country and Navarra. In these territories he established his Royal Barracks in Estella, Tolosa and Durango, but they were not the only localities in which he was.
His orders assistant, D. Jose Maria de Orbe y Gaytán de Ayala, compiled and saved the menus that were served to his Lord every day, throughout the Basque-Navarre geography.
